Always wear protective gloves. Cut-resistant gloves, especially when handling the blade. Always use a neutral detergent with ph between 7 to 8.
Always follow the manufacturer’s instructions exactly. Never attempt to clean the slicer while the slicer is in operation. Never use a scrubber pad, steel wool or abrasive material because it can scratch the machine. Never submerge the slicer completely or immerse base in water. Never put components in the dishwasher. Globe Slicer Repair Tips
Cleaning and maintaining a globe slicer's parts is an essential element for its longevity. Neglecting to do so can result in costly repairs, or worse yet – replacing the entire machine! it is important to regularly clean and inspect all the components of your slicer. First, disassemble all pieces, including blades, guards and other moving parts; ensuring safety by unplugging the unit from power source. Once apart, wipe down each piece with a damp cloth or sponge using a mild detergent; rinse thoroughly with water and let air dry before reassembling.
To maximize performance, sharpen blades as needed; use an approved sharpening stone or have them professionally sharpened once per month.
I posted this in r/chefit as well. Hey all! i recently acquired a globe g12 meat slicer second hand and am needing some help. We took the whole thing apart and cleaned it, and put it back together. We are now trying to sharpen the blade but can't get it to work. The deburring stone touches the blade no problem, but the sharpening blade won't touch the blade and thus we can't sharpen it. We are thinking that the blade itself is too worn down, from the previous owner to even sharpen, but aren't 100% does anyone have any advice or some tips that could help? thanks!.
Inspect the slicer for damaged or broken parts including gaskets & seals. A thorough visual inspection should be made of the entire slicer and its parts. Globe urges the owner/operator to inspect all components often and for an authorized service agent to inspect the entire slicer at least every 6 months, including all parts that are detachable for cleaning and sanitizing.
