This Japanese style of sushi began as street food in Tokyo almost 200 years back and has evolved into a sophisticated experience. The small pieces are either raw or marinated and then rolled in bite-size pieces vinegar rice, also known as nigiri. These masterworks of fresh fish are best eaten right away from the time they are made. Kabuto's Omakase dishes include three types and an a-la carte menu. This includes an appetizer (sashimi), miso soup, and dessert. Kabuto's Chinatown is just west from the Strip and it is well worth the short trip.

Koi can also be found on the second-floor of Planet Hollywood Casino. This Japanese restaurant has a romantic atmosphere that makes it the ideal place to grab sushi before you go out. From 5:00pm to 7:00pm, the happy hour menu offers salmon rolls starting at $6 and spicy tuna roll starting at $8.
The flavors include spicy tuna, salmon, yellowtails, albacore and squid. I loved the appetizers, especially egg rolls. The only thing not on the main menu that's AYCE is the sushi. Sushi Way, a sushi joint that offers all-you-can-eat sushi is also located just a short distance from the Strip. It's just one block from the Venetian making it easy for people to find it. The staff is friendly and the food delicious.

Yummy Grill & Sushi is a local Vegas favorite. It is located in the western part, near Summerlin. This restaurant boasts a relaxing atmosphere and offers affordable sushi. The menu offers many choices, including sashimi, sushi and vegetarian rolls. Specialties include the Arizona Roll with spicy yellowtail, cucumbers and ponzu sauce. The American Roll has crab, shrimp tempura, avocado and sauce. The Cherry Blossom is chopped soft shell crab, scallions, scallions and sauce. The menu includes many popular entrees such as chicken tempura, chicken teriyaki, and tempura.
